Ingredients:
2 cups rotini pasta
1/2 cup spicy Hungarian salami cut into small cubes
1/2 cup tomatoes š cut into cubes
1/2 cup rhubarb cut thinly in slices
1/2 cup fennel cut thinly in slices
2 Tbsp cilantro coarse chopped
2 Tbsp mayonnaise
1/2 tsp Dijon mustard
Salt and pepper
Instructions:
In a pot bring to a boil 1 litre water and cook pasta following the instructions on the package. Drain and rinse with cold water and set aside.
In a large bowl combine all the ingredients except cilantro, add mayonnaise and mustard. Add cold pasta and mix until all are covered with mayonnaise.
Add salt and crushed black pepper to your taste.
Add cilantro and divide the salad into bowls.
Sprinkle some cilantro to garnish.
