Heirloom tomato, mozzarella and tarragon bites

The best bites by fire with a glass of wine and you can call it unforgettable.


Ingredients: (8 pieces)


  • 2 cups heirloom tomatoes or cocktail tomatoes ( they can be cut in cubes or whole if they are small)

  • 1 Tbsp olive oil

  • 2 garlic cloves, pressed using garlic press

  • Salt and pepper

  • 8 Tbsp mozzarella cheese (grated)

  • 1/2 cup tarragon springs

  • 2 blocks of tender flake puff pastry rolled flat on flour dusted surface and cut into 4 pieces each.


Instructions:


  1. Preheat oven at 400 F.

  2. In a bowl combine tomatoes, olive oil, garlic, salt and pepper.

  3. On each piece of pastry place 1 Tbsp mozzarella cheese and top it with tomato mix. Fold the edges to protect the ingredients.

  4. Place the pastries on a lightly greased baking tray and bake for 20 minutes until golden brown. (For nicer colour you can use whisk an egg in a small bowl and brush on pastries before baking)

  5. Take the bites out of oven and sprinkle tarragon springs.
