Lentil salad with dried apricot

If you like lentil, this is what you are going to love. This salad has the earthy flavour of lentil which is also rich in iron combined with celery and herbs. I add dried apricot pieces and walnut to it to make it slightly sweet and crunchy.


  • 1 can of lentil drained

  • 5 celery stalks cut into thin slices

  • 2 Tbsp chopped parsley

  • 2 Tbsp chopped mint

  • 1/4 cup chopped dried apricot

  • 1/4 cup walnuts

  • Juice of one lemon

  • 2-3 Tbsp olive oil

  • 1 tsp cumin seeds

  • Salt and pepper


  1. In a large bowl combine lentil, celery, parsley, mint, apricots and walnuts.

  2. In a small bowl whisk lemon juice, olive oil, cumin seeds, salt and pepper.

  3. Pour the dressing on salad and mix.

  4. Garnish with mint leaves.
