
If you like lentil, this is what you are going to love. This salad has the earthy flavour of lentil which is also rich in iron combined with celery and herbs. I add dried apricot pieces and walnut to it to make it slightly sweet and crunchy.
Ingredients:
1 can of lentil drained
5 celery stalks cut into thin slices
2 Tbsp chopped parsley
2 Tbsp chopped mint
1/4 cup chopped dried apricot
1/4 cup walnuts
Juice of one lemon
2-3 Tbsp olive oil
1 tsp cumin seeds
Salt and pepper
Instructions:
In a large bowl combine lentil, celery, parsley, mint, apricots and walnuts.
In a small bowl whisk lemon juice, olive oil, cumin seeds, salt and pepper.
Pour the dressing on salad and mix.
Garnish with mint leaves.
