Green beans with hazelnuts

A warm salad can’t be easier. Crisp, tender and bright green beans make an elegant dish which can be topped with crumbled blue cheese.

Here I didn’t add cheese but it definitely something to take this super simple food to the next level.


Ingredients:


  • 1 lb green beans trimmed

  • 1 Tbsp any nut oil like hazelnut or walnut

  • 1 Tbsp lime juice

  • Salt and pepper

  • 1/4 cup toasted hazelnuts coarsely chopped

  • 1/4 cup blue cheese crumbled or chopped parsley (optional)


Instructions:


  1. Bring water to boil in a large pot. Add the beans and boil for 4-6 minutes (the beans should still be bright green)

  2. Strain the beans and transfer them into a bowl and toss with nut oil and lime juice. Season with salt and freshly ground pepper.

  3. Transfer to a plate, sprinkle with cheese and hazelnuts.
