
A warm salad can’t be easier. Crisp, tender and bright green beans make an elegant dish which can be topped with crumbled blue cheese.
Here I didn’t add cheese but it definitely something to take this super simple food to the next level.
Ingredients:
1 lb green beans trimmed
1 Tbsp any nut oil like hazelnut or walnut
1 Tbsp lime juice
Salt and pepper
1/4 cup toasted hazelnuts coarsely chopped
1/4 cup blue cheese crumbled or chopped parsley (optional)
Instructions:
Bring water to boil in a large pot. Add the beans and boil for 4-6 minutes (the beans should still be bright green)
Strain the beans and transfer them into a bowl and toss with nut oil and lime juice. Season with salt and freshly ground pepper.
Transfer to a plate, sprinkle with cheese and hazelnuts.
