Asparagus with smoked salmon and garlic scape



This recipe is so colourful and tasty. 😋

It is a perfect dish for summer time. I have used #ontariogrown #garlicscape and #asparagus from #summerhillmarket.

Adding #caraway_seeds and #dill to the recipe elevated the flavour to the next level. And yogurt dressing makes this fabulous meal cool and refreshing.😉



Ingredients:


  • 1 bunch of purple or green asparagus

  • 1/4 cup olive oil

  • 1/4 cup lemon juice

  • 1 Tbsp lemon zest

  • 1 Tbsp caraway seeds

  • 3 garlic scapes (chopped or whole as you prefer)

  • 1/2 cup thinly sliced smoked salmon 🍣

  • Salt and pepper

  • 1/2 cup Greek yogurt

  • 2 Tbsp chopped dill weed

  • 3 boiled eggs cut in half

  • Red onion slices and some dill to garnish


Instructions:


  1. Preheat oven to 425F

  2. Arrange asparagus in a baking pan.

  3. In a bowl whisk to gether olive oil, lemon juice and zest, caraway, salt and pepper.

  4. Drizzle over asparagus.

  5. Add the smoked salmon.

  6. Put the garlic scapes on top.

  7. Roast for 15 minutes.

  8. In a small bowl make the yogurt mix by adding yougurt, and dill. You may add some salt and pepper.

  9. Take asparagus out of oven and let it cool for 5 minutes.

  10. Arrange the eggs over asparagus and spoon the yougurt mix over them.

  11. Garnish with red onion slices and dill weeds.
